Christmas Day is only a couple of weeks away and with that in mind, we want to give you a festive recipe. This is a crowd pleaser and low on ProPoints.
What would Christmas be without the pudding? In case you haven’t plucked the courage to do one before, here you go.
Christmas Pudding Parfait
The Basics

3 ProPoints per serving
20 mins to prepare & freezing
Serves 8
What you need:
- 75g sultanas
- 75g dried cranberries
- ½ tsp mixed spice
- 30ml brandy
- 500g 0%fat Greek yogurt
- 200ml semi-skimmed milk
- 2 tsp clear honey
What to do:
- Place the sultanas, cranberries and mixed spice in a bowl. Add the brandy, stir and leave to soak.
- Meanwhile, whisk together the yogurt, milk and honey. Pour into an ice-cream maker and churn according to the instructions until semi-solid. Add the fruits and mix.
- Line a 900g loaf tin with clingfilm, leaving some hanging over the edges. Spoon in the mixture and fold over the clingfilm. Freeze for 3-4 4 hours or until just set. To serve, soften for 20 minutes, then serve in 8 slices.
Suggestion:
If you don’t have an ice-cream maker, whisk the yogurt, milk and honey together and pour into a freezerproof tub. Freeze for 2 hours. Beat with a fork to break up. Repeat twice, adding the soaked fruits during the last beating. Freeze until solid. Soften before serving.
Ta-da. The perfect Christmas pudding.
