Pure and simple recipes: Paleo Chicken Curry with sweet potato

No rice, no problem

A simple and tasty dish that sits perfectly within your Paleo regime.

Ingredients:

  • 4 chicken fillets
  • 2 sweet potatoes
  • 2 tablespoons of coconut oil
  • 1 red pepper
  • 1 onion
  • 3-4 cloves of garlic
  • ½ head of broccoli
  • 50g of mushrooms
  • 1 tablespoon of red curry powder

Instructions:

  • Chop the sweet potatoes into a number of small cubes.
  • Heat up a tablespoon of coconut oil and drizzle over a baking tray, then place the cubes of sweet potatoes on it.
  • Cover the sweet potatoes with a drizzle of coconut oil, rosemary and season with pepper. Place the baking tray into the oven and cook for 20 minutes, turning after 10 minutes.
  • Chop up the chicken, red pepper, onion, garlic, broccoli and mushrooms.
  • Heat up a wok or a frying pan and add two tablespoons of coconut oil. Allow the wok or pan to heat up for two minutes and then add the chopped chicken.
  • Cook the chicken until it’s tender and slightly brown and set aside.
  • Add the pepper, onion, garlic and sliced mushrooms to the wok or pan and begin to cook. When ready, add the chicken and season with a tablespoon of red curry powder.
  • Allow to simmer for a few minutes and serve with the sweet potatoes fresh out of the oven
  • Enjoy!
