Pure and easy recipe of the day: Jerk Beef Kebabs with Coconut Rice

With the weather FINALLY taking a turn for the better, here’s a look at a tasty recipe you can cook in the oven or on the BBQ.

Jerk Beef Kebabs with Coconut Rice…

Ingredients

  • 2 teaspoons dried jerk seasoning
  • Red pepper
  • Onion
  • Juice of a lime
  • 300g dried long grain and wild rice
  • 250ml boiling hot vegetable stock
  • 25g creamed coconut
  • 2 tablespoons chopped fresh coriander

Instructions

  1. In a bowl, mix together the jerk seasoning and lime juice. Add the beef and stir to coat in the spices. Thread on to four wooden or metal skewers, alternating the beef, red pepper and onion chunks.
  2. Preheat the grill to medium. Meanwhile, put the rice in a medium-sized lidded saucepan and pour over the stock. Bring back to the boil, cover and simmer according to packet instructions or until tender and the water has been absorbed. Stir in the creamed coconut and coriander, cover with a lid and set aside.
  3. Spray the beef kebabs with cooking spray and cook for 8-10 minutes, turning occasionally until cooked to your liking. Serve immediately with the coconut rice.
