Brought to you by Hellmann’s.
The wise (or lazy) chef knows that when it comes to preparing top-class food, it’s best to leave it to the experts.
At this time of year, the mere hint of a barbeque has everyone licking their lips and Hellmann’s know how to do it just right.
They’ve teamed up with YouTube star and grilling king DJ BBQ to help convince non-grillers that food cooked over a fire is the way forward.
We defy you to look at these road-trippin’ ribs without feeling the urge to drool.
Want to give it a try? Of course you do. Here’s how.
Full recipe: Serves 6
Ingredients
- 1 rack of trimmed pork spare ribs with a lot of fat and the membrane removed
- 1tbsp olive oil
Vinegar mix:
- 50ml cider vinegar
- 50ml apple juice mix
Glaze:
- 50ml Hellmann’s Chipotle sauce
- 50ml Hellmann’s American BBQ sauce
Spice mix:
- 1tbsp brown sugar
- 1tbsp sea salt
- 1tbsp cracked pepper
- 1tbsp cumin
- 1tbsp ground coriander
- 2tbsp of garlic granules
- 1tbsp of onion granules
- Half a tsp of mustard powder
Method
- Prepare a BBQ smoker to 130°C.
- Take the rack of ribs and rub with the oil on both sides.
- Rub the ribs with the spice mix and smoke in the BBQ, meat side down for 2 hours.
- After 2 hours, glaze with half Hellmann’s Chipotle sauce and half Hellmann’s American BBQ sauce on both sides, then smoke for another 20 minutes.
- After 20 minutes take a large sheet of foil (doubled up), lay it out and spread out any leftover glaze you have.
- Lay the ribs on top and pour a little of the vinegar mix over.
- Finish off with a little more glaze and wrap the foil tight. Place back in the BBQ for another 2 hours until tender.
- Slice up the ribs and serve with salad.
