Healthy Recipe: Chicken, rosemary and Parmesan burger

In weather like this you’re going to have to crack out the BBQ, so here’s a great recipe to make sure you keep it healthy.

There’s nothing like manning the BBQ on a gorgeous summer’s day. It’s one of the only places that a man feels completely at home with a spatula, and who doesn’t love making something from scratch anyway. So here’s how you can make a healthy tasty recipe for you’re BBQ in just a few simple steps.

Chicken, rosemary and Parmesan burger

The basics:

10 ProPoints values per serving (40 ProPoints per recipe)
Takes 10 minutes to serve and 15 minutes to cook
Serves 4

What you’ll need:

400g chicken mince 
6 spring onions, chopped finely
1 tbsp chopped fresh rosemary
25g Parmesan, grated finely
25g fresh white breadcrumbs

What to do:

1. Mix the chicken with the spring onion, rosemary, Parmesan and breadcrumbs. Season well and shape into 4 large burgers. Make sure the BBQ is good and hot before cooking, and then grill the burgers for 15-20 minutes, turning occasionally. Be careful the burgers don’t get stuck to the grill and fall apart.

2. Place half a bread roll on each plate and top with some lettuce and tomato. Pop a burger on each, then a spoonful of light mayonnaise and finish with the top half of the roll. Done.

Now sit back relax and enjoy the day.
