Healthy recipe: One-pan ham ‘n’ egg & toast

There’s only so much takeaway one man can handle, so put down the menu and pick up a pan as JOE, with the help of Weight Watchers, brings you some seriously tasty recipes.

Here’s a breakfast idea that will set you off on the day with energy and the knowledge that you’ve made a healthy start. Plus it’s quick and easy, with only one pan to wash up – what more could you ask for?

One pan ham ‘n’ egg on toast

 

The basics:

7 ProPoints values per serving
Takes 10 minutes
Serves 1

What you need:

Low-fat cooking spray
1 slice wholemeal bread
1 egg
2 slices of Parma ham
½ teaspoon snipped fresh chives, to garnish (optional, or if you’re feeling a bit posh)
1 tablespoon tomato ketchup, to serve

What to do:

1. Spray a non stick frying pan with the cooking spray and heat until hot. Add the bread, placing it to one side of the pan.

2. Crack the eggs into a ramekin (or cup) and carefully add to the pan. Cook for 2-3 minutes until the white is set or cooked to your liking.

3. Meanwhile, turn the bread over after a minute or so, when the underside is brown. Add the Parma ham to the pan and cook for 1-2 minutes until crispy, turning once.

4. Slide everything from the pan on to a warmed serving plate and serve garnished with chives (if using) and the tomato ketchup on the side.

Why not try this:

Serve your breakfast with two rashers of extra lean back bacon instead of the Parma ham. The ProPoints value of this will be 8.
