Simple, healthy and delicious.
Ingredients:
- 500g (1lb) salmon fillet
- 300g (10oz) broccoli, broken into florets
- 1 clove garlic, peeled and chopped
- 2 tablespoons olive oil
- 2 red peppers, deseeded and chopped
- 5g (¼oz) Parmesan cheese, grated
- 60g (1¾oz) watercress
- 10g (⅓oz) parsley
- 10g (⅓oz) pumpkin seeds
- juice of half a lemon
Instructions:
- Grill the salmon fillet for 6-8 minutes on either side
- Blanch the broccoli in boiling water for 8 minutes and for the last minute, add the chopped pepper. When done, drain both.
- Get the blender out and throw in the pumkin seeds, garlic, parsley, parmesan, lemon juice and olive oil. Blend until you have a smooth dressing.
- Toss the broccoli, red pepper and salmon gently in the dressing.
- This will serve four people and you will be king among your healthy friends.
