Pure and Simple Recipe of the Day: Broccoli and salmon salad

Simple, healthy and delicious.

Ingredients:

  • 500g (1lb) salmon fillet
  • 300g (10oz) broccoli, broken into florets
  • 1 clove garlic, peeled and chopped
  • 2 tablespoons olive oil
  • 2 red peppers, deseeded and chopped
  • 5g (¼oz) Parmesan cheese, grated
  • 60g (1¾oz) watercress
  • 10g (⅓oz) parsley
  • 10g (⅓oz) pumpkin seeds
  • juice of half a lemon

Instructions:

  • Grill the salmon fillet for 6-8 minutes on either side
  • Blanch the broccoli in boiling water for 8 minutes and for the last minute, add the chopped pepper. When done, drain both.
  • Get the blender out and throw in the pumkin seeds, garlic, parsley, parmesan, lemon juice and olive oil. Blend until you have a smooth dressing.
  • Toss the broccoli, red pepper and salmon gently in the dressing.
  • This will serve four people and you will be king among your healthy friends.
