Ingredients
- 4 small sweet potatoes, halved lengthwise
- 2 tablespoons olive oil
- kosher (thick-grained) salt and black pepper
- 3 ounces of grated fontina cheese ( you can also use gouda or gruyere here too)
- One and a half ounces of Parmesan cheese
Instructions
- Stick on the oven and make sure it’s around 425° F
- Give the potatoes an oul’ rub with the oil and season with ¼ teaspoon each salt and pepper
- Lash it into the oven and make sure you bake, cut-side down, on a baking sheet, until golden brown and tender, for around 18 to 22 minutes
- Turn oven to broil
- Throw the fontina and Parmesan into a small bowl and mix it up
- Turn the potatoes cut-side up and top with the cheese mixture, spreading it equally
- Broil until the cheese is melted and golden brown, normally takes around 2-3 minutes
- Take out of the oven and bask in the knowledge that your legend status in the kitchen is still increasing
