Pure and Simple Recipe of the Day: Curried Egg Salad Sandwich

Trust us, this waaaaaaaay nicer than the title suggests it is…

Ingredients:

  • 2 hard-boiled eggs, chopped
  • 2 tablespoons chopped red bell pepper
  • 1/8 teaspoon salt
  • 2 tablespoons plain Greek-style low-fat yogurt
  • 1/4 teaspoon curry powder
  • 2 slices rye bread, toasted
  • 1/2 cup fresh spinach

Instructions:

  • Mix the eggs, yogurt, bell pepper, curry powder, salt, and pepper, in a small bowl; stir well.
  • Place the spinach on the tasted rye bread and top it with the egg salad. Doesn’t get much simpler than that.
  • EAT.
