Simple, healthy and delicious.
Trust us, this waaaaaaaay nicer than the title suggests it is…
Ingredients:
- 2 hard-boiled eggs, chopped
- 2 tablespoons chopped red bell pepper
- 1/8 teaspoon salt
- 2 tablespoons plain Greek-style low-fat yogurt
- 1/4 teaspoon curry powder
- 2 slices rye bread, toasted
- 1/2 cup fresh spinach
Instructions:
- Mix the eggs, yogurt, bell pepper, curry powder, salt, and pepper, in a small bowl; stir well.
- Place the spinach on the tasted rye bread and top it with the egg salad. Doesn’t get much simpler than that.
- EAT.
