A balanced and healthy breakfast.
Ingredients:
- 4 smoked turkey rashers
- 3 tomatoes halved
- 2 slices of wholegrain bread
- 1 small ripe avocado, stoned, peeled and halved
- 1 tablespoon English mustard
- 2 handfuls of rocket salad
- a little bit of rapeseed oil
Instructions:
- Heat a non-stick pan and use a little oil to grease it. Cook the turkey rashers and tomatoes for a few minutes each side.
- Toast the wholegrain bread and spread the mustard on it. Also, squash the avacado into the bread.
- Simply put the rashers and tomatoes onto the toasted bread and hey presto, you’ve got a delicious, healthy, simple, tasty breakfast
