Pure and Simple Recipe of the Day: Smoky rashers & tomatoes on toast

A balanced and healthy breakfast.

Ingredients:

  • 4 smoked turkey rashers
  • 3 tomatoes halved
  • 2 slices of wholegrain bread
  • 1 small ripe avocado, stoned, peeled and halved
  • 1 tablespoon English mustard
  • 2 handfuls of rocket salad
  • a little bit of rapeseed oil

Instructions:

  • Heat a non-stick pan and use a little oil to grease it. Cook the turkey rashers and tomatoes for a few minutes each side.
  • Toast the wholegrain bread and spread the mustard on it. Also, squash the avacado into the bread.
  • Simply put the rashers and tomatoes onto the toasted bread and hey presto, you’ve got a delicious, healthy,  simple, tasty breakfast
