Pure and Simple Recipe of the Day: Stir-fry prawns with spinach and noodles

A quick and tasty recipe that’s easy to make with minimum prep and fuss.

Ingredients:

  • 3 tbsp sunflower oil
  • 2 Garlic cloves, thinly sliced
  • 1 Chopped pepper
  • 200g Raw, peeled tiger prawns
  • 2 tbsp Soy sauce
  • 100g bag of baby spinach

Instructions

  1. Add noodles to pot of boiling water for 20 minutes.
  2. Add oil and garlic to a heated wok.
  3. After a minute add the pepper.
  4. 2-3 minutes later remove the pepper and garlic and cook the prawns in the wok.
  5. Stir-fry the prawns for 2-3 minutes and add the soy sauce.
  6. Return the pepper and garlic to the pan and add the spinach.
  7. Cook for 2 minutes.
  8. Serve with noodles.
