Pure and Simple Recipe of the Day: Sun-dried Tomato Omelette

A very tasty meal for any time of the day.

Yet another delicious and simple recipe for you to try.

Ingredients

  • Three free range eggs
  • One tablespoon low-fat milk
  • 1 small garlic clove
  • Two teaspoons of extra virgin olive oil
  • Two  tablespoons chopped oil-packed sun dried tomatoes
  • ½ ounce crumbled goat’s cheese (about 2 tablespoons)
  • Thin strips of freshly cut basil

Instructions

  • Crack the eggs into a bowl and then whisk until frothy. Mix in the milk, salt, pepper and garlic.
  • Heat up a non-stick pan on medium-high heat and add two teaspoons of olive oil.
  • Pour the eggs mixture onto the pan.
  • As soon as the eggs are set from the bottom, sprinkle the sun-dried tomatoes, cheese and basil over the middle of the egg “pancake”.
  • Cook for another minute or two and then it is ready to serve.
