Ingredients
- Three free range eggs
- One tablespoon low-fat milk
- 1 small garlic clove
- Two teaspoons of extra virgin olive oil
- Two tablespoons chopped oil-packed sun dried tomatoes
- ½ ounce crumbled goat’s cheese (about 2 tablespoons)
- Thin strips of freshly cut basil
Instructions
- Crack the eggs into a bowl and then whisk until frothy. Mix in the milk, salt, pepper and garlic.
- Heat up a non-stick pan on medium-high heat and add two teaspoons of olive oil.
- Pour the eggs mixture onto the pan.
- As soon as the eggs are set from the bottom, sprinkle the sun-dried tomatoes, cheese and basil over the middle of the egg “pancake”.
- Cook for another minute or two and then it is ready to serve.
