Pure and simple recipes: Scrambled eggs with avocado slices and ham

This breakfast recipe will make getting up a lot easier.

Ingredients:

  • 2 slices of ham
  • 1 avocado
  • 4 eggs
  • some chopped onion
  • some chopped parsley
  • a smidgen of hot sauce – whichever one you prefer

Instructions: 

  • Grill the bacon rashers until they are crisp.
  • While the rashers are grilling, chop your avocado in half, remove the pit, and scoop the flesh into a bowl. Cut up some of the avocado and stick it back in the bowl.
  • Add the chopped onion and parsley into the avocado bowl.
  • When the rashers are done, dry them out and then chop them into little pieces and add to the avocado, onion and parsley and then give it a right good stirring.
  • Now, using the eggs, make your scrambled egg and simply add the avocado mixture to it.
  • For added flavour, throw a bit of your favourite hot sauce on to it.
  • Get it down your neck.
