This is a healthy, tasty and fulfilling meal.
Ingredients:
- 200g trimmed broccoli florets (about 6), halved
- 1 diced chicken breast
- 2 garlic cloves, shredded
- 15g of ginger, shredded
- 1 sliced red onion
- 1 roasted red pepper cut into cubes
- 1 tablespoon of mild chilli powder
- 2 tablespoons of olive oil
- 1 tablespoon of honey
- 1 tablespoon of low-salt soy sauce
- 250g of cooked brown rice
Instructions:
- Boil the kettle and put the broccoli into a medium pan ready to go on the heat. Pour the boiling water over the broccoli then boil for 4 mins.
- Heat the olive oil in a non-stick wok and stir-fry the ginger, garlic and onion for 2 mins.
- Add the mild chilli powder and stir briefly.
- Add the chicken and stir-fry for 2 mins more.
- Drain the broccoli and keep the water.
- Put the broccoli into the wok with the soy, honey, red pepper and 4 tablespoons of broccoli water.
- Cook until heated through.
- Heat the rice following the instructions on the packet and serve with the stir-fry.
