Pure and simple recipes: Stir-fried chicken with broccoli & brown rice

This is a healthy, tasty and fulfilling meal.

Ingredients:

  • 200g trimmed broccoli florets (about 6), halved
  • 1 diced chicken breast
  • 2 garlic cloves, shredded
  • 15g of ginger, shredded
  • 1 sliced red onion
  • 1 roasted red pepper cut into cubes
  • 1 tablespoon of mild chilli powder
  • 2 tablespoons of olive oil
  • 1 tablespoon of honey
  • 1 tablespoon of low-salt soy sauce
  • 250g of cooked brown rice

Instructions:

  • Boil the kettle and put the broccoli into a medium pan ready to go on the heat. Pour the boiling water over the broccoli then boil for 4 mins.
  • Heat the olive oil in a non-stick wok and stir-fry the ginger, garlic and onion for 2 mins.
  • Add the mild chilli powder and stir briefly.
  • Add the chicken and stir-fry for 2 mins more.
  • Drain the broccoli and keep the water.
  • Put the broccoli into the wok with the soy, honey, red pepper and 4 tablespoons of broccoli water.
  • Cook until heated through.
  • Heat the rice following the instructions on the packet and serve with the stir-fry.
