You may have noticed that the weather has been a little on the chilly side. Here is a meal that is perfect for the cold elements.
Chorizo and cauliflower soup
The Basics:

2 ProPoints per serving
10 mins to prep
20 mins to cook
Serves 6
What you need:
- Calorie controlled cooking spray
- 1 onion, finely chopped
- 350g potato, peeled and chopped
- 600g cauliflower, broken into small florets
- 1 litre vegetable stock
- 12 slices chorizo
- Fresh parsley, to garnish
What to do:
- Mist a pan with calorie controlled cooking spray and add the onion. Season and fry, stirring for 3 minutes.
- Add the potato and cauliflower with the vegetable stock. Cover and bring to the boil. Then reduce the heat and simmer for 15 minutes.
- Meanwhile, place a frying pan over a high heat. When the pan is hot, fry the chorizo, Turning once, until crisp. And the oils are running. Set aside
- Ladle the soup into a blender and blitz until smooth. Season to taste, then divide between 6 warm bowls. Top with the chorizo and garnish with the parsley to serve.
