Recipe of the week: Chorizo and cauliflower soup

You may have noticed that the weather has been a little on the chilly side. Here is a meal that is perfect for the cold elements.

Chorizo and cauliflower soup

The Basics:

2 ProPoints per serving

10 mins to prep

20 mins to cook

Serves 6

What you need:

  • Calorie controlled cooking spray
  • 1 onion, finely chopped
  • 350g potato, peeled and chopped
  • 600g cauliflower, broken into small florets
  • 1 litre vegetable stock
  • 12 slices chorizo
  • Fresh parsley, to garnish

What to do:

  1. Mist a pan with calorie controlled cooking spray and add the onion. Season and fry, stirring for 3 minutes.
  2. Add the potato and cauliflower with the vegetable stock. Cover and bring to the boil. Then reduce the heat and simmer for 15 minutes.
  3. Meanwhile, place a frying pan over a high heat. When the pan is hot, fry the chorizo, Turning once, until crisp. And the oils are running. Set aside
  4. Ladle the soup into a blender and blitz until smooth. Season to taste, then divide between 6 warm bowls. Top with the chorizo and garnish with the parsley to serve.
