Fillet steak on Mediterranean veg

For a special, dinner try this succulent fillet steak, served on a pile of chargrilled vegetables.

The Basics:

What you need:

  • Calorie controlled cooking spray
  • 1 courgette, sliced diagonally into strips
  • 1 red pepper, de-seeded and cut into large chunks
  • 5 asparagus spears
  • 125g (4 ½ oz) lean fillet steak, visible fat removed
  • 2 teaspoons chopped fresh rosemary
  • 1 teaspoon balsamic vinegar
  • Salt and freshly ground black pepper

To serve

  • 3 cherry tomatoes halved
  • 4-5 fresh basil leaves

What to do:

  1. Preheat a griddle pan or grill. Spray the vegetables with the cooking spray and then cook them in batches until tender. Remove and keep warm.
  2. Spray the fillet steak with the cooking spray and rub the rosemary over both sides. Add the steak to the griddle pan, or a non-stick frying pan. Cook for 2-3 minutes per side, depending on its thickness and how well done you like it. Add the vinegar and 1 tablespoon of water to the pan and heat for 1 minute to make a sauce.
  3. Pile the vegetables on to a warm plate and arrange the steak on top. Sprinkle with the sauce, season, and serve with cherry tomatoes and basil.

Cook’s tip:

When using a griddle pan, always lightly spray the food, not the pan, with cooking spray.
