Hearty chicken soup
In keeping with our promise to keep our readers nourished, today we bring you the perfect recipe for the cold weather, courtesy of Weight Watchers. Nothing beats a good soup and hearty chicken soup is both tasty and straight forward.
Right, winter is finally here. It’s dark, cold and fairly miserable. It would be all too easy to make a bad choice for your dinner in your rush to get warm quickly but we all know that’s not the way to success with Weight Watchers. So how do you have a hearty, and good for you, meal ready in time to watch the match at 7.45? Here’s how.
And once you grab all the simple ingredients in the shop there are only two instructions. You can’t ask for any easier than that.

The Basics:
Serves 4
4 ProPoints per serving
16 ProPoints per recipe
5 mins prep, 15 mins cooking
Freezing
What you need:
- 1 litre (1 ¾ pints) chicken stock
- 2 carrots, peeled and diced
- 80 g (3 oz) small dried pasta shapes
- 300g (10 ½ oz) skinless boneless chicken breast, cut into strips
- 2 bay leaves
- 150g (5 ½ oz) green beans, trimmed and chopped freshly ground black pepper
What to do:
- In a large pan, bring the stock to a boil. Add the remaining ingredients, except the beans, and simmer for 10 minutes.
- Stir in the beans and leave to cook for another 5 minutes before ladling into warmed bowls. Grind over some black pepper and serve immediately. That wasn’t so difficult now was it?
Suggestions:
Why not serve with 25g (1 oz) finely grated Parmesan cheese, shared between the bowls, for an extra ProPoints value of 1 per serving.
