Recipe of the week: Mushroom and spinach omlette

Nothing quite beats an omelette for lunch, dinner, or just a snack. This mushroom and spinach offering is delicious, and more importantly, easily made.

Nothing quite beats an omelette for lunch, dinner, or just a snack. This mushroom and spinach offering is delicious, and more importantly, easily made.

Mushroom and spinach omelette

The Basics:

5 ProPoints values per recipe

10 minutes in total

Serves 1

What you need:

  • Calorie controlled cooking spray
  • 100g(3 ½ oz) mushrooms, sliced thickly
  • 50g(1 ¾ oz) baby leaf spinach
  • 25g (1 oz) low fat soft cheese
  • A few gratings of nutmeg
  • 2 eggs
  • Freshly ground black pepper

What to do:

  1. Lightly spray a saucepan with the cooking spray, add the mushrooms and fry for 3 minutes until tender. Add a splash of water, if needed, to prevent the mushrooms from sticking to the pan. Stir in the spinach, mixing until it starts to wilt and then add the soft cheese and nutmeg. Remove from the heat and set aside.
  2. Have a warm plate to hand, ready for the finished omelette. Place a small non stick frying pan 18-20cm (7-8 inches) in diameter over a medium heat. Spray with the cooking spray. Beat the eggs with 1 tablespoon cold water and season with pepper. Pour the mixture into the pan and leave for about 15 seconds or until just beginning to set around the edges of the omelette into the centre. Tilt the uncooked egg mixture into the gaps, to give a lightly ruffled appearance.
  3. When almost all the free-running egg has set, continue to cook the omelette until the underside is golden brown. The omelette is ready to fill when the topside is set, but still looks slightly soft and shiny.
  4. Place the filling on one side of the omelette then use a wooden spatula to flip the other half over the filling. Slide out on to the warmed plate and eat immediately.

Cook’s tip:

Have your filling ready before you start to cook the omelette, as this will only take 2-3 minutes and need your full attention.

Serving suggestion:

For a ham and mushroom omelette: cook the mushrooms as above, but omit the spinach and low fat cheese. Add the cooked mushrooms to the set omelette, along with a 30g (1 ¼ oz) serving of wafer thin ham, cut into strips. This will be 5 ProPoints values per serving.

And there you have your delicious omlette at a cost of only five ProPoints.
