As the saying goes, you can beat an egg, but you can’t beat a curry. Well if it’s not, it should be a saying. JOE will show you just how easy Rogan josh is to make. You won’t be disappointed.
Beef rogan josh
Serve this lovely curry with 40g (1 ½ oz) dried brown basmati rice per person, cooked according to the packet instructions, for an extra 4 ProPoints values per person.

What you need:
- Calorie controlled cooking spray
- 500g (1lb 2 oz) diced braising steak
- 1 large onion sliced thinly
- 2 carrots, peeled and sliced
- 3 garlic cloves, chopped
- 2.5cm (1 inch) fresh root ginger, peeled and grated.
- 3 cardamom pods, split
- 1 teaspoon cumin seeds
- 1 teaspoon medium curry powder
- 2 tablespoons paprika
- 1 teaspoon mild chilli powder
- 2 tablespoons tomato puree
- 300ml (10 fl oz) vegetable stock
- Salt and freshly ground black pepper.
What to do:
- Heat a large, heavy based, lidded saucepan over a medium heat. Spray with the cooking spray and cook the beef for 6 minutes until browned all over. Remove the beef and any juices from the pan, then set to one side.
- Add the onion and carrots to the pan and spray with more cooking spray, stir and cover. Cook the onion and carrots for 5 minutes over a medium heat until softened. Stir occasionally. Add the garlic, ginger, cardamom, cumin seeds, curry powder, paprika, chilli powder and tomato puree and stir to coat the vegetables in the spices.
- Return the beef, and any juices, to the pan with the stock and bring to the boil, then reduce the heat to low and part-cover. Simmer gently, stirring occasionally, for 1 hour or until the beef is tender. Season before serving.
