Recipe of the week: Sausage, apple and ginger casserole

For those of us who have a decent appetite, this is the perfect meal. Filling, tasty and low on ProPoints, this is also simple to make. Perfect really.

For those of us who have a decent appetite, this is the perfect meal. Filling, tasty and low on ProPoints, this is also simple to make. Perfect really.

Not only is this recipe ideal for the family, it’s perfect for the middle of the week and easy on the pocket as well.

Sausage, apple and ginger casserole

The basics:

Serves 4

4 ProPoints per serving

16 ProPoints values per recipe

20 minutes preparation, 1 hour 5 minutes cooking

What you need:

  • 8x39g (1 ½ oz) low fat pork Sausages
  • 1 onion, sliced
  • 1 red pepper, de-seeded and sliced
  • 1 parsnip, chopped
  • 1 apple, cored and sliced
  • 600ml (20 fl oz) fiery diet ginger beer
  • 1 cm ( ½ inch) fresh root ginger, grated
  • 2 teaspoons dried rosemary
  • 1 chicken stock cube, dissolved in 4 tablespoons boiling water
  • 1 tablespoon cornflour
  • Freshly ground black pepper

What to do:

  1. Preheat the oven to Gas Mark 6/200°C/fan oven 180°C.
  2. Prick the sausages all over and dry-fry in a large, lidded, flameproof and ovenproof casserole dish until golden all over. Remove the sausages and set aside.
  3. Add the onion, pepper and parsnip to the casserole dish and cook for 5 minutes until starting to turn golden.
  4. Return the sausages to the dish with the apple. Mix together the ginger beer, ginger, rosemary and stock and pour into the dish, then season. Bring to the boil, cover and transfer to the oven for  1 hour.
  5. Mix the cornflour with a little water and stir until smooth then add the casserole. Return to the oven for 5 minutes until the sauce thickens, then serve.

There is your casserole ready for serving and sure to be a crowd pleaser.
