Zing!
Ingredients (serves two/three):
- Three part-boned chicken breasts
- One/two chillies depending on how hot you want it. Three to blow your mind. Red/yellow chillies ideal
- One red pepper and one yellow pepper
- 2 tbsp white wine vinegar
- 1 tbsp smoked paprika
- 1 tbsp Worcestershire Sauce
- A fistful of basil
- 1 lemon
- 2 cloves of garlic
- Half a red onion
- Two large sweet potatoes
- One normal potato
- Half a block of feta
Instructions
- Spuds: Place the three potatoes in a microwave on high power for 10 minutes. When you hear the beep, put into a large bowl, pour a couple of swishes of olive oil over them with salt. Coat potatoes with olive oil and place in pre-heated oven at 180 degrees for 50 minutes.
- Piri-Piri sauce: Your spuds are in the oven; now combine the basil, garlic cloves, half a red onion, one or two chillies, zest of one lemon and juice of half a lemon, Worcestershire Sauce, paprika and white wine vinegar. Blitzed until it forms a liquid paste. Add a small drop of water, salt and pepper. Cover the base of a lasagne dish with the mixture.
- Sliced peppers: Once this is done, chop the yellow and red peppers into quarters and set aside.
- Chicken: With half an hour cooking time left, stab the part-boned chicken breasts a couple of times to let the sauce get in there. Then coat with olive oil, salt and pepper before sealing in a frying pan on an initially high heat. Once the outside of the chicken is a crispy, golden colour and fully sealed, place into the lasagne dish and coat with the piri-piri sauce. Scatter the sliced peppers around the chicken breasts and transfer to the oven (where the spuds will be cooking for another 20 minutes approximately.
- Feta: Slice half a packet of feta into cubes.
- Spuds: The 50 minutes are up. Remove the two sweet potatoes and normal potato and roughly mash together, skins and all. Set out in a dish and sprinkle over the feta. Add a leaf or two of basil if that’s the kind of thing you might be into.
- Chicken: Finally, take the chicken out of the oven, check to make sure it’s fully cooked on the inside (juices run clear) and serve it all up.
