So long 3pm slump: Quick and easy snacks to keep the hunger off

Has the 3pm slump hit?

If so, maybe it’s time for a tasty, nutritious snack.

Yes, you’ve heard us correctly, we said: “healthy and nutritious”… so slowly back away from the cake.

With thanks to Centra and star nutritionist Sarah Keogh, here are 5 great recipes which will help stave off the mid-afternoon hunger.

Monday: Spinach Banana & Peanut butter smoothie

The protein in this smoothie will keep you going all afternoon. The perfect energy boost on a Monday.

Ingredients

1 banana

1/2 cup of spinnach

1 tablespoon of butter

1 1/4 cup of unsweetened soy milk

Method

Quite simply blend until smooth. It couldn’t be easier.

Tuesday: Banana & peanut butter ice-cream

Do you scream for ice-cream? We certainly did. Here’s a lovely little treat, which won’t pile on the pounds.

Ingredients

2 sliced frozen bananas

2-3 tablespoons smooth peanut butter

1-2 teaspoons Honey

2 tablespoons Coconut/almond milk

Method

  • Put all ingredients in a food processor or blender and pulse for a few seconds and repeat again, scrape the sides of the dish, pulse and repeat for a few minutes until you have a smooth ice cream.
  • You can eat it straght away or freeze it for 1-2 hours in an air tight container. Will keep for 2 weeks in the freezer. Serves 2-4.

Wednesday: Sweet potato crisps

Everyone loves crisps right? And everyone will love these sweet potato ones too.

Ingredients

  • 2 tablespoons of olive oil.
  • 1 medium sweet potato,
  • 1/2 tablespoon of paprika.
  • 1/4 tablespoon of smoked salt.

Method

  • Pre-heat the oven to 375°F and arrange a rack in the middle.
  • Slice the sweet potato into very thin rounds, peel sweet potatoes and slice thinly, using either a mandolin or sharp knife. Know that chips that are too thick in parts won’t crisp up all the way.
  • In a large bowl, toss sweet potatoes with olive oil, paprika, and salt using your hands until thoroughly coated.
  • Place sweet potato chips in a single layer on a rimmed baking sheet covered with parchment paper.
  • Bake in the oven for 10 minutes, then flip the chips over and bake for another 10 minutes.
  • For the last ten minutes, watch the chips closely and pull off any chips that start to brown, until all of the chips are cooked.

Thursday: Sweet potato wedges 

A quick hand snack that you can make in less than a half an hour. Another reason sweet potatoes are absolutely wonderful.

Ingredients

  • 1 tablespoon of olive oil
  • 1 dollop of sour cream
  • 4 sweet potatoes
  • 1 sprinkle of paprika

Method

  • Cut the Sweet Potatoes into chunky wedges. Toss in a small amount of olive oil and.
  • For a griddle effect place on a griddle pan for a few seconds each side.
  • Place on a baking tray and cook at 180 degrees for 25 mins.
  • Serve with a dollop of sour cream and a sprinkle of paprika.

Friday: Sweet potato mash

Is there no end to the magic of the sweet potato? Clearly not.

Ingredients 

  • 1 tablespoon of butter
  • 4 peeled and cubed sweet potatoes
  • 1 litre of fresh Irish milk
  • 3 cloves of crushed garlic
  • 2 tablespoon of sour cream

Method

  • In a large pot boil sweet potatoes in salted water until tender, drain in a colander.
  • Meanwhile, melt butter and sauté garlic until lightly golden.
  • Return potatoes to the pan, add milk and sour cream; mash until smooth and creamy.
  • Adjust salt and pepper to taste.
