Homemade lavender lemonade

As I am sitting on my roof terrace and enjoying the sunshine, I still cannot believe I am in Ireland. When the weather’s good, is there a better place?

The only thing that we are missing as we hope for a sunny summer is an appropriate drink that can refresh us and keep us going.

So this week I would like to introduce you to Homemade Lavender Lemonade. This cocktail is a perfect match that balances lemon and lavender and has a sweet finish.

 

For Homemade Lavender Lemonade you will need:

1 ½ shot of Absolute Citron

1 shot of Lavender infused sugar syrup (instructions below)

½ shot of fresh squeezed lemon juice

Lemonade (or 7UP)

 

Making your own sugar syrup is much more economical then buying it. The basic rule for the sugar syrup is two parts of sugar and one part of water or one part of sugar and one part of water.

*Bring the water to boil, add the sugar into the boiling water and stir constantly.

*Once the sugar is dissolved completely, remove the pan from the heat (do not boil for too long or the syrup will be too thick).

*Allow the syrup to cool completely and then add a handful of dry lavender.

*Keep refrigerated for 48hours and then strain into a bottle. You can store it in a well-sealed bottle in the refrigerator for around 6 months.

 

Directions for the Homemade Lavender Lemonade:

* Fill half of a tall glass with crushed ice and add a twist of lemon

* Put a scoop of ice cubes to a cocktail shaker

* Pour all the ingredients into your shaker, with the exception of the lemonade (or your shaker might explode during the shaking)

* Shake vigorously

* Strain into the glass

* Add more crushed ice and top up with lemonade

* Garnish with two lemon slices
