JOE Burgers: The French burger

We've teamed up with one of the nation's top purveyors of fine burgers, Jo'Burger of Rathmines in Dublin, to look beyond Henry and bring you the French burger.

The French: one has to admit, once you can get past their thievery on the football pitch, that they make good food.

We’ve teamed up with one of the nation’s top purveyors of fine burgers, Jo’Burger of Rathmines in Dublin, to look beyond Henry’s dubious antics and bring you… The French Burger.

The French Burger (serves 4)

Ingredients

1kg minced beef
3 onions diced
Oil
2 cloves garlic
1 Pkt bacon lardons
Dijon mustard
Diced mushrooms
Red wine
Sugar
Chopped fresh thyme (optional)
Salt & pepper
Crusty buns/baguettes
Crème fraiche

Instructions

Heat the oil. Add the lardons then the onion, garlic and thyme (keep some onion back to mix in with the burger). Cook until the onions are golden. Add finely diced mushroom (for 5 mins) and add a knob of butter, a dash of red wine and a small spoon of sugar, then season.

Knead the mince and add the Dijon mustard, garlic, finely chopped the remaining onion plus some salt & pepper to the meat and divide into 4/5 patties (round ones for buns, oblong for baguettes).

Pan fry for 6 mins per side. Meanwhile, toast the buns/baguettes and slice them in half.

Spread the bottom half small amount of mustard and place burger on top. Top with the warm lardon, garlic and onion mixture and a spoon of crème fraiche, and you can health it up with lettuce tomato if you like.
